    This one comes straight from our wider family archives, a much-loved recipe that’s been passed around the table for decades.

    It’s the kind of hearty, no-fuss meal that works just as well for a quick midweek dinner as it does for a slow Sunday lunch. Simple ingredients, honest flavour, and that unmistakable feeling of comfort when the aroma fills the kitchen.

    Just like Freddie’s sauces, this recipe has stood the test of time, proof that some things never need changing.

    Ingredients

    • 400g beef mince

    • 3 potatoes (peeled and grated)

    • 1 onion (peeled and grated)

    • 1 carrot (peeled and finely diced)

    • 1 small swede (peeled and grated)

    • Piece of pumpkin (optional, peeled and grated)

    • Salt & pepper, to taste

    • 6 puff pastry sheets (approx.)

    • 1 egg, beaten (for brushing)

    Method

    • Preheat oven to 180°C (fan forced).

    • Squeeze the water out of the grated vegetables to remove any excess moisture

    • In a large bowl, combine all ingredients. Add a little salt and pepper to taste.

    • Roll out puff pastry sheets and cut to your preferred size.

    • Place filling in the centre, fold, and seal edges.

    • Brush the tops with beaten egg.

    • Bake for 40 minutes or until golden brown.

     

    Freddie's Notes

    • Shortcut tip: You can make the filling ahead of time and store it in the fridge overnight.

    • For extra flavour: Brush the tops halfway through baking for an even deeper golden finish.

    • To serve: Always with a big spoon of Freddie’s Tomato Sauce, that’s non-negotiable.

    Serving Suggestions
    Perfect on its own or with a side of peas, mash, or salad.
    Great cold for lunchboxes the next day.

    Storage
    Store cooked pasties in an airtight container in the fridge for up to 3 days.
    Freeze for up to 2 months. Reheat in the oven until hot and crisp.

    Make It Yours
    Swap beef mince for lamb or turkey.
    For a vegetarian option, try lentils, mushrooms, or a mix of root veg.
    Add a spoonful of Worcestershire Sauce to the mix for extra richness.
